Father’s Day Breakfast in Bed

This year, for Father’s Day, my sister Amy and I prepared a breakfast in bed for our dad. 😀 He loved the meal, so I thought I’d share the easy and delicious recipes with all of you!

We started by making these puff pastry flowers and pastry pinwheels that look really impressive, but are actually SUPER easy to make. I found a video called “Puff Pastry 4 Ways” and thought that Father’s Day would be the perfect occasion to try it out. Amy picked out these two shapes, but the other two also look really fun. We also chose different berries than what the original recipe called for, and you can use whatever fruit you have on hand.

One of my favorite food blogs is Food Wishes by Chef John, and he recently posted this Dutch Baby recipe that I’ve been dying to try out (I mean, how cute is the name Dutch BABY?!). The recipe calls for bacon and asparagus, which are two of my dad’s favorite foods, so I decided to make this for him. As long as you have one of these cast iron pans that can go directly from the stove top to the oven, you really can’t screw up this dish. And aside from the amazing taste, the final product has a really unique consistency. Imagine that an omelette had a baby with a pancake, that’s what this reminded me of (Maybe that’s where the name came from??..haha).

We added a glass of fresh-squeezed orange juice, and the breakfast tray was complete! Even if there isn’t a special occasion coming up, these would be perfect brunch items to make for your loved ones. The puff pastry would also be a really fun activity for kids, as they can get their hands dirty and make crazy shapes. Hope you all enjoyed this foodie post, the written recipes are down below!

Recipe #1 Puff Pastries

Cream Cheese Filling

INGREDIENTS
1 8-ounce block cream cheese
¼ cup granulated sugar
½ teaspoon vanilla extract

PREPARATION
In a medium bowl, mix cream cheese, sugar, and vanilla until smooth.

Raspberry Pastry Flower

INGREDIENTS
1 sheet thawed puff pastry
20 raspberries
4 tablespoons Cream Cheese Filling, recipe above
powdered sugar

PREPARATION
Preheat oven to 400°F.
Cut the puff pastry into 4 equal squares.
Leaving a ½ centimeter border, make 8 total cuts along the edges of the square, with each cut going about ⅓ of the way through the length of the edge. Make sure the cuts do not touch.
Place a tablespoon of the cream cheese filling in the middle of the square, then top with 4 raspberries schweiz-libido.com.
Take one of the edge flaps and fold it towards the center, looping over the raspberry. Repeat with the other flaps. Place a raspberry in the center, on top of where all the flaps overlap.
Repeat with the remaining pastry squares.
Bake for 15-20 minutes until pastry is golden brown and puffed.
Serve with a sprinkle of powdered sugar.

Blueberry Pastry Pinwheel

INGREDIENTS
1 sheet thawed puff pastry
36 blueberries
9 tablespoons Cream Cheese Filling, recipe above
powdered sugar

PREPARATION
Preheat oven to 400°F.
Cut the puff pastry into 9 equal squares.
Make 4 cuts on each square, with each cut starting from the outside corners of the square and stopping just short of the center.
Take one of the flaps and fold it towards the center. Fold every other flap towards the center until you have created a pinwheel shape.
Place about a tablespoon of the cream cheese filling in the middle, then place 4 blueberries on top.
Repeat with the remaining pastry squares.
Bake for 15-20 minutes until pastry is golden brown and puffed.
Serve with a sprinkle of powdered sugar.

Recipe #2 Dutch Baby

INGREDIENTS (for 2 large per 4 small portions)
3 large eggs
2/3 cup milk
3/4 teaspoon kosher salt
1/2 cup finely grated Parmigiano-Reggiano (1/4 cup if packed, but don’t pack it)
freshly ground black pepper and cayenne to taste
1 tsp lemon zest
1/2 cup all-purpose flour (packed)
1 tbsp olive oil
6 strips bacon
1 generous cup sliced fresh asparagus

 

PREPARATION
Preheat oven to 475°F.
Make batter by combining eggs, milk, salt, Parmigiano-Reggiano, lemon zest and flour
Chop bacon into bite-size pieces and cook until in olive oil until crisp
Add diced asparagus
Pour mixed batter into pan
Bake for 15-20 minutes until pastry is golden brown and puffed.
